So grab your pen and paper now because we’re about to take a crash course on how to make spicy mayo, perfect for dipping fries and adding to your favorite dishes.
How to Make Spicy Mayo: A Basic Guide
Ingredients:
- ½ tsp salt (2.5 ml)
- ½ tsp Tabasco sauce (2.5 ml)
- ¾ cup olive oil (180 ml)
- ¼ tsp Dijon mustard (1.25 ml)
- 1 tsp white wine vinegar (5 ml)
- 5 tsp lemon juice (7.5 ml)
- ½ Tbsp Wasabi (7.5 ml) or 3 small chili padi (chopped)
- 1 garlic clove (minced)
- 1 large egg
Things you’ll need:
- Mixing bowl
- Small bowl (for egg white draining)
- Whisk
- Blender or food processor
- Plastic wrap or lid
Step 1: Separate Yolk from Egg White
You will only need the egg yolk for your spicy mayo, so you can discard the egg white. Get a small bowl and crack the egg open over it. Make sure to capture the egg yolk using the shell and drain the egg white into the bowl.
Note: The yolk contains lecithin, which helps in thickening the mayo.
Step 2: Mix the Egg Yolk, Lemon Juice, and Vinegar
Get a separate medium-sized glass mixing bowl and combine the three ingredients. Thoroughly whisk these ingredients together until they are evenly combined and a vibrant yellow.
Note: Vinegar and lemon juice add flavor and acidity to the finished product.
Step 3: Add the Seasonings
Add salt, Tabasco sauce, Dijon mustard, minced garlic, and Wasabi paste into the mixture. Mix the seasonings well to incorporate.
Note: You can also use chili peppers to season your mayo. You don’t have to remove the seeds before you add them as it contributes a large portion of the peppers’ heat.
Step 4: Whisk First 1/4 Cup of the Oil
Whisk in 1/4 cup of olive oil continuously, adding 1.25 ml or ¼ tsp at a time. This process should take about 4 minutes to complete.
Note: It may be helpful to use a food processor or a blender.
Step 5: Slowly Add the Rest of the Oil
Add the remaining amount of oil slowly into the bowl and continue to whisk while adding. It should take about 8 minutes to finish.
Note: Once the rest of the oil has been completely added, the spicy mayo should be fairly thick.
Step 6: Refrigerate Spicy Mayo Until Ready for Serving
Cover the mayo with plastic wrap or transfer to a lidded container before refrigerating. The spicy mayo should be consumed within 5 days.
Note: To add color to your mayo, you can thinly chop a Thai chili into tiny pieces and sprinkle it on top as a garnish. This gives a fun and exciting look to your spicy mayo.
