- 8-9 ounces dried ramen noodles
- 4 cups chicken stock vegetable stock works, too
- 2 cups water
- 1/2 cup dried shiitake mushrooms
- 1 1/2 tablespoons fresh ginger grated
- 3 cloves garlic minced
- 3 tablespoons soy sauce low sodium
- 1 tablespoon mirin or rice vinegar
- 2-3 tablespoons sriracha sauce amount as preferred
- 2 tablespoons sesame oil
- salt and pepper amount as preferred
- 3 pieces chicken breasts boneless with skin on

- Preheat the oven to 375°F.
- Brush the baking dish lightly with melted butter. Then brush the chicken on both sides with melted butter.
- Season chicken generously with salt and pepper.
- Bake for 18 to 20 minutes or until the chicken is cooked through and no longer pink.
- Let the chicken sit before slicing.
- Heat sesame oil in a stockpot over medium heat. Saute the garlic and ginger.
- When the mixture smells fragrant already, stir in the sriracha sauce, soy sauce, and mirin.
- Let it simmer for two minutes before adding the chicken stock and water.
- Close the lid then bring the broth to a boil. Once it boils, reduce the heat.
- Simmer for 5 minutes then season with salt and pepper. Add dried mushrooms.
- Let the broth continue to simmer gently for another 10 to 15 minutes. Make sure the Shiitake mushrooms are soft enough.
- Boil water in a pot. The amount of water must be enough to cover the eggs.
- Use eggs that are still cold from the fridge. Add the eggs gently into the boiling water, reduce the heat slightly and let the eggs simmer for about 7 minutes.
- Prepare ice and water in a bowl. Once the eggs are done, leave them in the ice bath for about five minutes.
- Carefully peel away the shells when the eggs are cool enough to handle. Then slice in half lengthwise.
- There are two ways for you to prepare the ramen noodles. You can cook them as instructed, without the seasoning packets, or you can let them soften for about 2 to 3 minutes in the simmering ramen broth.
- Place a serving of noodles in each bowl and pour the desired amount of broth over them. Then assemble the egg, cilantro, nori, and scallions.
- Serve while hot!
Tip: Don't break the noodles. It will be easier for you to transfer the noodles into bowls if you don't.
