The Only Spicy Ramen Noodle Recipe You’ll Ever Need
Make this easy spicy ramen noodle recipe at home! In less than an hour, you can enjoy a bowl of delicious ramen made with roasted chicken and a delicious broth spiked with Sriracha sauce.

    • 8-9ounces dried ramen noodles
    Ramen Broth
    • 4cups chicken stockvegetable stock works, too
    • 2 cups water
    • 1/2cup dried shiitake mushrooms
    • 1 1/2tablespoons fresh gingergrated
    • 3 cloves garlicminced
    • 3tablespoons soy saucelow sodium
    • 1tablespoon mirin or rice vinegar
    • 2-3tablespoons sriracha sauceamount as preferred
    • 2tablespoons sesame oil
    • salt and pepperamount as preferred
    Baked Chicken
    • 3pieces chicken breastsboneless with skin on
    • melted butter
    • salt and pepperamount as preferred
    Cooking the Chicken
    1. Preheat the oven to 375°F.
    2. Brush the baking dish lightly with melted butter. Then brush the chicken on both sides with melted butter.
    3. Season chicken generously with salt and pepper.
    4. Bake for 18 to 20 minutes or until the chicken is cooked through and no longer pink.
    5. Let the chicken sit before slicing.
    Making the Ramen Broth
    1. Heat sesame oil in a stockpot over medium heat. Saute the garlic and ginger.
    2. When the mixture smells fragrant already, stir in the sriracha sauce, soy sauce, and mirin.
    3. Let it simmer for two minutes before adding the chicken stock and water.
    4. Close the lid then bring the broth to a boil. Once it boils, reduce the heat.
    5. Simmer for 5 minutes then season with salt and pepper. Add dried mushrooms.
    6. Let the broth continue to simmer gently for another 10 to 15 minutes. Make sure the Shiitake mushrooms are soft enough.
    Boiling the Eggs
    1. Boil water in a pot. The amount of water must be enough to cover the eggs.
    2. Use eggs that are still cold from the fridge. Add the eggs gently into the boiling water, reduce the heat slightly and let the eggs simmer for about 7 minutes.
    3. Prepare ice and water in a bowl. Once the eggs are done, leave them in the ice bath for about five minutes.
    4. Carefully peel away the shells when the eggs are cool enough to handle. Then slice in half lengthwise.
    Preparing the Ramen Noodles
    1. There are two ways for you to prepare the ramen noodles. You can cook them as instructed, without the seasoning packets, or you can let them soften for about 2 to 3 minutes in the simmering ramen broth.
    Arranging the Ramen Bowl
    1. Place a serving of noodles in each bowl and pour the desired amount of broth over them. Then assemble the egg, cilantro, nori, and scallions.
    2. Serve while hot!

    Tip: Don’t break the noodles. It will be easier for you to transfer the noodles into bowls if you don’t.
