2. Spicy Pickled Green Beans With Jalapeños
What are spicy pickled green beans without some hot jalapeño? You’ll say hot, hot, hot to this pepper-laced pickled beans recipe with some natural Mexican spice!
What You’ll Need:
- Green beans
- Jalapeños, sliced as desired
- Garlic, sliced thinly
Brine Ingredients:
- White vinegar
- Water
- Kosher salt
- Sugar
Cooking Instructions: Clean and sterilize two to three pint-sized jars. Prepare 1 pound each of green beans and jalapeños. Wash veggies thoroughly and snip ends of green beans. You can cut the green beans in half if the whole length doesn’t fit the jar.
Bring water to a boil in a large saucepan. Blanch green beans and jalapeños for two minutes. Take the vegetables out and drop in ice-cold water to stop the cooking process. Fill the jars with equally divided green beans, jalapeños, and garlic.
In the same saucepan, bring to boil a mixture of 2 1/2 cup of water and vinegar. Add two tablespoons each of salt and sugar. Stir the mixture constantly until the sugar dissolves. Continue to boil for two minutes and then turn off the heat. Finally, pour the brine into the jars until the vegetables are completely submerged. Cover the jar tightly and let it sit on the countertop to cool. Refrigerate the pickles once cool and keep chilled for at least 24 hours. You can also store your pickled green beans for a month.
